Sharing the Love of Cooking
With so many good cooks out there and a love of sharing recipes I thought I would create a different style of recipe Blog. This one is designed to not only share in great recipes, but to divide them by specific dietary categories. Recipes that are for High Fiber Diets, Low Carb Diets, Low Fat Diets, Heart Healthy Diets, etc. So feel free to add a recipe or to take a recipe, give it a try and then report back on the results. Measurements are nice, but they aren't necessary, just try to give an approximation and suggested adjustments.

How about some Tomato Basil. In the summer when you have a glut of tomatoes this can be made with fresh tomatoes. Keep in mind that fresh tomatoes are typically sweeter than canned.

1 small sweet onion diced
4 cloves garlic diced
2 large cans tomato sauce
2 large bunches fresh basil pureed in food processor
4 cans chicken stock
Olive Oil
Sour Cream
Saute onion in olive oil unti translucent. Add garlic and saute, do not brown garlic, makes for a bitter flavor. Add tomato sauce, basil and chicken stock bring up to gentle boil then turn down. Simmer for ½ hour. Taste at this point to determine if you want stronger garlic or stronger basil flavor and adjust. Top with a dollop of sour cream. You can make this festive by topping with a dollop of Pesto, but be careful, will alter the flavor.
